Heat-reversible, this gelling agent is perfect for fruit pulp-based toppings, offering stable hold and a brilliant appearance.

Optimum use for successful preparations

To avoid lumps, mix NH dry pectin with sugar before adding to water. Dissolve in around 15 minutes for optimum results.

  • Thermo-reversible gel: maintains texture and shine even after heating.
  • Ideal for: fruity toppings and pastry fillings
  • Recommended dosage: 0.8 to 2% depending on pulp content.

Ingredients : Pectin E440ii, Sequestrant: Disodium diphosphate E450i, Sucrose or Dextrose, Tricalcium phosphate E341ii.

Indicative dosage: 0.8 to 1.2%. Directions for use : Dispersion : Pre-mix the powder with thedry ingredients and pour into liquid under effective agitation, or disperse in a non-solvent medium.

Dissolution: Complete dissolution is rapidly achieved at 80/85°C. Limited use for foodstuffs. Store away from moisture and heat.
